I am looking forward to attending Blog Life University’s conference when it comes to Atlanta later this July. There are so many great bloggers speaking that I know I am going to walk away with a burning passion to blog even more!
One thing is for sure, I can’t help but participate in the Sweet ‘n Southern Desserts Recipe Contest! Dixie Crystals is sponsoring the ultimate Blog Life Conference contest. All you have to do is create a unique recipe around this year’s theme of Sweet and Southern Desserts….the only rule is to use at least 1 tablespoon of sugar. Don’t delay because this contest ends at midnight 7/10/16. All winners will be secretly notified by 7/19/16 so don’t wait to get your conference ticket. The official Grand Prize winner will be announced during the Dixie Crystal’s Sweet Spa Reception Friday night.
So, as I was thinking what on earth could I make? Then it dawned on me that I needed to do something with what Georgia and Atlanta are known for-PEACHES! After all, the Blog Life University conference is being held in Atlanta, the home to hundreds of peach related streets, businesses, etc… Now that I had the fruit and the Dixie Crystals sugar as two ingredients, I had to think, think, think, think…..
One of my favorite desserts to make it a cheesecake. So why not make a peach cheesecake. Seems fitting to the occasion in my opinion!
Georgia Peach Cheesecake
1 package of cream cheese, softened to room temperature
1/2 cup of sour cream
2 teaspoons of Peach whiskey OR vanilla extract, not both
1/2 cup of Dixie Crystals sugar
1/4 cup of brown sugar
2 large or 3 medium firm Georgia peaches, cleaned, pitted, and sliced into wedges (freeze until use and also save scraps to mix with ingredients)
Crust of choice (graham cracker or flaky)
Preheat oven to 350 degrees.
Add all ingredients except peach scraps to a mixing bowl and beat until smooth.
Then add in the scraps of peaches if you choose to do so.
This allows for bits of peaches to be in mixture.
Pour into crust of choice.
Place a pie pan of water on the bottom rack of oven to prevent cracking of the cheesecake.
Bake at 350 for one hour.
Let it cool completely and decorate with the peach wedges.
Cut, serve, and enjoy!
